Apricot Stilton pots


Ingredients:
300g vegetarian Stilton
100g softened butter
40g chopped walnut
25g dried apricot (chopped)
Serves: 3
Instructions:
Crumble the Stilton into a small bowl.
Soften the Butter, before beating until creamy.
Stir Butter into Stiliton.

Add the Stiliton mixture into three ramkins and smooth.
Combine the Walnuts and Apricots.
Press the Apricot mixture into the top of the Cheese.
Serve (these will keep for 2 month frozen).
